- 1 lb ground turkey
- 1/2 cup finely grated zucchini
- 1/4 cup finely grated carrot
- 1/4 cup finely chopped onion
- 1/4 cup almond flour
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 medium zucchini, spiralized
- 1 cup marinara sauce
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine ground turkey, grated zucchini, grated carrot, chopped onion, almond flour, egg, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well.
- Form the mixture into 1-inch meatballs.
- Place meatballs on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until cooked through.
- While meatballs are baking, prepare the zucchini noodles.
- Heat marinara sauce in a saucepan over medium heat.
- Add zucchini noodles to the marinara sauce and cook for 2-3 minutes until slightly tender.
- Serve meatballs over zucchini noodles with marinara sauce.
Notes
- For extra flavor, add a pinch of red pepper flakes to the meatball mixture.
- You can substitute other finely grated vegetables like bell peppers or spinach.
- Ensure zucchini noodles are not overcooked to maintain a slight crunch.
