Description

These turkey meatballs are packed with hidden vegetables and served with zucchini noodles for a healthy, low-carb meal.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup finely grated zucchini
  • 1/4 cup finely grated carrot
  • 1/4 cup finely chopped onion
  • 1/4 cup almond flour
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 medium zucchini, spiralized
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, grated zucchini, grated carrot, chopped onion, almond flour, egg, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well.
  3. Form the mixture into 1-inch meatballs.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes, or until cooked through.
  6. While meatballs are baking, prepare the zucchini noodles.
  7. Heat marinara sauce in a saucepan over medium heat.
  8. Add zucchini noodles to the marinara sauce and cook for 2-3 minutes until slightly tender.
  9. Serve meatballs over zucchini noodles with marinara sauce.
